Oven baked Shrimp N' Mango Salsa

Shrimp N' Mango Salsa



SHRIMP
Ingredients
3 pounds of shrimp
Sea salt
Pepper
Extra Virgin Olive Oil
2 or 3 whole unpeeled garlic cloves
Pimenton Dulce – (optional) Hungarian Paprika maybe used instead
Lemon Thyme


Procedure:
Shell and devein the shrimp.
Place them on a cookie sheet tray on parchment paper.
Add all ingredients listed above, leaving the olive oil and the thyme for last,
Place the tray with the shrimp in a preheated 375 oven for about 10-15 minutes.


Cooking time will vary according to each oven

MANGO SALSA
Ingredients


4 Cups of diced semi ripe mango
1 small red onion
1 stalk of leeks
1 small clove of garlic
1 bunch of fresh cilantro (about a cup)
1 smoked, peeled, diced and seeded red pepper
1 smoked, peeled, diced and seeded jalapeño
¼ cup or less of Extra Virgin Olive Oil (optional)
¼ cup of lemon juice
Sea Salt and Pepper to taste


Procedure:
Grill both the jalapeño and the red pepper.
Peel, seed and dice both peppers.
Combine all ingredients above and refrigerate for an hour or so.
Better if done a day ahead.
Is very important to seed the jalapeño if you wish not to have a very spicy salsa
